Hot smoked or cold smoked?
Hot smoking cooks the meat with heat and smoke, so it comes out soft and juicy but does not keep. Cold smoking runs for days at a low temperature, drying the piece so it lasts. Ask the workshop which was used.
How should smoked meat be kept?
Cold, and wrapped loosely, because sealed under film without air it sweats and turns. The term in days is on the card and it counts from the day of production, not from the day you bought it.
How can I tell good smoking?
By a smell of smoke rather than of smoking liquid. Ask what the wood was and how many hours it took, because chips give an even scent while liquid smoke leaves every piece sharp and identical.
Can I order for a celebration?
Yes, smokehouses take volume orders when told in advance. Date, weight and price are agreed in the listing thread, and carriage across the country is booked separately through our Telegram bot.
