Honey from working apiaries: wildflower, cotton, acacia, sainfoin, mountain, sunflower and comb honey still in the frame. Beside the variety stands the year it was extracted, which tells you whether the jar is from this season or the last, and crystallised honey goes for less. Counting is by the kilogram, and beekeepers often name a minimum lot. Hives follow the flowering, so the province on a card speaks of the forage as much as of the road.

How do I choose a variety?

By taste and by purpose. Acacia is pale and stays liquid for a long time, cotton honey whitens and thickens quickly, mountain and sainfoin carry more scent. The beekeeper declares the variety and the site does not confirm it.

What does the extraction year tell me?

Freshness. Honey does not spoil for years, but the aroma fades and the taste shifts. Last season goes for less and more often ends up in baking or with a processor.

Is crystallised honey a bad sign?

No, it is the normal course: almost any honey sets within months and cotton honey within weeks. Staying liquid all year is rare, and liquid honey in midwinter is a reason to ask whether it was warmed.

How is comb honey different?

Comb honey is sold in the frame or as a cut piece, wax and all. It costs more and is bought for the table or as a gift, while extracted honey goes into containers and on to processing.

Can I buy from an apiary in bulk?

Yes, many listings name the smallest lot on offer. Packaging and dispatch are agreed with the beekeeper directly, since the site takes no part in the payment.
